MINT CHOCOLATE AVOCADO ICE CREAM

INGREDIENTS

  • 2 avocados, pitted and halved
  • 1/2 cup honey
  • 1/2 cup coconut milk
  • Pinch salt
  • 2-3 drops mint extract
  • 1/2 cup dairy free chocolate chips

INSTRUCTIONS

  1. Add avocados (flesh only), honey, coconut milk, salt, and mint extract to blender or food processor.
  2. Blend until smooth and creamy.
  3. Stir in chocolate chips by hand, then pour batter into a small loaf pan.
  4. Freeze 2-4 hours.
