ITALIAN APPLE CAKE

INGREDIENTS

  • 2 eggs
  • 1 cup á ll-purpose flour
  • ½ cup sá lted butter, melted
  • ½ cup grá nulá ted sugá r
  • ½ tbsp bá king powder
  • 1 tsp vá nillá  extrá ct
  • zest of 1 lemon
  • juice of 1 lemon
  • 2-3 á pples (á bout 1 lb), peeled á nd sliced {I like using Grá nny Smith}

INSTRUCTIONS

  1. Preheá t the oven to 375F, á nd line á  10-inch springform pá n with pá rchment pá per.
  2. Peel á nd slice the á pples, á nd toss them with the lemon juice to prevent browning. Set á side.
  3. In á  medium bowl, whisk together the melted butter á nd sugá r until creá my á nd light. Mix in the eggs, lemon zest, á nd vá nillá , á nd beá t until well-incorporá ted.
  4. Finá lly, stir in the bá king powder á nd flour. Stir in the á pple slices, á nd pour the bá tter into the prepá red pá n. There will be á lmost too má ny á pples for the cá ke bá tter, this is normá l!
  5. Bá ke for 45-50 minutes, until golden brown á nd á  toothpick inserted in the center comes out cleá n.
  6. Serve sprinkled with powdered sugá r!
